Nature Notes

Where have these bean all our lives?

Well, they are red…ish. And they do look like noodles…

Red Noodle yard-long beans? Rattlesnake snap beans?

…any surprise?

Ted continues to dish out some head-scratchers as the harvest continues. Cut straight from the vine out of the Vegetable Heirloom and Ornatmental gardens, these beans, as with everything else from the Gardens of Eatin’, are being utilized by the quite-capable chefs of the Arboretum Restaurant. What they think up to do with these things, we don’t know, but the salads have never tasted better!

This bean found its name due to its snake-like skin, resembling the rattler.
